ABOUT FRESH CITY
Fresh City creates a better life through food. Founded in 2011, we are an urban farm and retailer of seasonal, sustainable and organic fresh food. Each day we make and bake exceptionally sourced meals, salads, snacks, breads, pastries and breakfasts from scratch. We operate two sister brands including Mabel’s Bakery, a popular bakery producing artisan breads and pastries and The Healthy Butcher, a pioneer in organic and 100% grass-fed beef. We farm in Downsview Park, where we also operate a farmer incubator program, as well as at Baka. We have eight retail locations between our three brands and deliver to thousands of homes each week throughout the Greater Toronto Area.
As a member of the pie production team, you are responsible for ensuring that the quality and consistency of the Mabel's Bakery line of sweet and savoury pies are maintained while working with the rest of the Prepared Foods and Pastry Teams, helping to ensure that production targets are met.
WHAT YOU’LL BE DOING
Following existing recipes and processes two types of pie dough using a combination of grating and pressing tools and hand mixing.
Pressing Pie Shells to desired thickness and coverage of pie tins.
Filling Pie Shells with appropriate filling weights, ensuring even distribution of liquid and whole pieces of filling in each pie shell.
Checking fillings for quality including quantity of meats or fruits, colour and general appearance
Topping pies and hand crimping edges
Labelling trays and storing correctly (fridge or freezer)
Vac sealing and labelling product according to standards
Labelling and storing goods raw goods, mis en place, sauces, etc. correctly, ensuring proper date rotation
Assistance with end product, raw ingredient, packaging and label inventories
Other duties as required including but not limited to;
Assisting with other production areas as needed, including pastry, packing, and sandwiches
Handling machinery including but not limited to pie press, blast chillers, vac seal machines, blenders and food processing equipment
Following all food handling protocols as set by the kitchen and the board of health.
Cleaning and sanitizing all work surfaces
Cleaning and maintaining all shared equipment
Other Duties as Required
WHAT YOU’RE BRINGING TO THE TABLE:
Works well in a team setting (agreeable, courteous and positive).
Reliable (always shows up on time)
Organized and able to work quickly
Pay close attention to detail and are able to work neatly
Can work independently, but not afraid to ask for help.
One year of commercial kitchen experience
Interest/knowledge in organics/farming/local food an asset
You LOVE food and have a PASSION for anything delicious
Reporting to Kitchen Leads and Director, Kitchen Operations
Schedule: Full time (37.5 hours per week) Tuesday to Saturday. 4PM - Midnight.
Please note: Must be available for two (2) weeks of training. The training schedule will be 7AM - 4PM from Sunday to Wednesday each week.
Hourly Wage: $15
